Nowadays it's easy to whip this together from a mix. But sometimes it's nice to go back and do it from scratch. It gives you more control and you can tweak it to how your family likes it.

Ingredients
- ¾ cups sifted flour
- 1½ teaspoons baking powder
- 1 teaspoon sugar
- ½ egg beaten until light
- ¼ - ½ teaspoon salt
- ½ cup milk
- 1½ teaspoons melted shortening
Instructions
- Sift flour.
- Add baking powder, sugar and salt.
- Sift into a bowl.
- Beat until light
- Add milk and melted shortening.
- pour into sifted flour.
- Mix until flour is moistened.
- Heat skillet and grease lightly with fat.
- Pour batter into skillet.
- Bake until top is full of little air bubbles.
- Turn to opposite and brown.
- Serve at once.
Notes
- Mom wrote, "½ recipe" on the top of the card. The writing is faded and the card shows signs of age, so this may have been what she used back when the family was still smaller. Since she and dad eventually had 4 kids, this recipe wouldn't have made enough. My guess is that she doubled or tripled it as the need arose.
