Ingredients
  1. 2 pounds hamburger
  2. 1 medium onion
  3. 4 ounce can chopped green chili peppers
  4. 4 ounce taco sauce
  5. 8 ounces tomato sauce
  6. 2 15 ounce cans cream of mushroom soup
  7. ½ cup milk
  8. 12 corn taco shells (frozen kind)
  9. 2 cups grated cheddar cheese
Instructions
  1. Brown hamburger with chopped onion. Drain well.
  2. Add green chili peppers, taco sauce, tomato sauce.
  3. Mix together cream of mushroom soup and milk.
  4. Heat until warm, then add to meat mixture.
  5. Cut taco shells into 1 inch squares.
  6. Layer a buttered 11x14 pan with shells.
  7. Put layer of hamburger mix, then layer of cheddar cheese.
  8. Do this 2 times.
Notes
  1. Obviously you would bake it after that, but Mom left no further instructions. My best guess would be to bake for 30 minutes at 350°.

Ingredients
  1. ¾ cups sifted flour
  2. 1½ teaspoons baking powder
  3. 1 teaspoon sugar
  4. ½ egg beaten until light
  5. ¼ - ½ teaspoon salt
  6. ½ cup milk
  7. 1½ teaspoons melted shortening
Instructions
  1. Sift flour.
  2. Add baking powder, sugar and salt.
  3. Sift into a bowl.
  4. Beat until light
  5. Add milk and melted shortening.
  6. pour into sifted flour.
  7. Mix until flour is moistened.
  8. Heat skillet and grease lightly with fat.
  9. Pour batter into skillet.
  10. Bake until top is full of little air bubbles.
  11. Turn to opposite and brown.
  12. Serve at once.
Notes
  1. Mom wrote, "½ recipe" on the top of the card. The writing is faded and the card shows signs of age, so this may have been what she used back when the family was still smaller. Since she and dad eventually had 4 kids, this recipe wouldn't have made enough. My guess is that she doubled or tripled it as the need arose.

Ingredients
  1. 1½ pounds lean ground beef
  2. 2 (8 oz) cans tomato sauce
  3. 1 egg, beaten
  4. ½ cup dry bread crumbs
  5. ¼ cup finely chopped onions
  6. 1 teaspoon salt
  7. ¼ teaspoon pepper
  8. ¼ teaspoon thyme
  9. 6 slices American cheese
Instructions
  1. Combine beef, 1 can tomato sauce, egg, bread crumbs, onions and seasonings.
  2. Divide mixture in half; lightly pack one portion into a 4x8x2-inch loaf pan.
  3. Arrange 4 cheese slices on top and pack the remaining meat evenly over the cheese layers.
  4. Turn out into a shallow baking pan.
  5. Cut remaining cheese slices in strips and arrange on top of loaf.
  6. Bake in moderate oven (350°F.) for 40 minutes.
  7. Remove excess fat from pan and pour remaining can of tomato sauce over loaf.
  8. Bake 30 minutes longer or until done.
  9. Makes 5 to 6 servings.

This was actually from a Lee & Perrins Worcestershire sauce ad. It may seem strange now-a-days to go to such lengths to make, basically, a meatloaf look like steak, but back in the 50s and 60s budgets were tight, and this is how you stretched the paycheck.

Ingredients
  1. 2 pounds ground round
  2. ½ pond lean pork
  3. 1 envelope dry onion soup mix
  4. 4 tablespoons Worcestershire sauce
  5. 2 cups stuffing mix
  6. 1½ cups tomato juice
  7. 2 strips thick bacon
  8. ½ cup melted butter
  9. 3 tablespoons catsup
  10. 2 thin slices carrot
Instructions
  1. Mix together ground round, pork, soup mix, 2 tablespoons of the Worcestershire sauce, stuffing mix and tomato juice.
  2. Form into steak shape 1 inch thick
  3. Wrap the bacon at the outer edge to resemble fat
  4. Broil 10 minutes each side
  5. During broiling brush with mixture of butter, remaining Worcestershire sauce and catsup
  6. Use carrot slivers to make "bone"
